Rendang Mutton
Ingredients: Hei Zhen Zhu 300g Potatoes 200g Curry Paste 200g Coriander Powder 2 tbsp Chilli Powder 2 tbsp Chinese Cinnamon 2pcs Coconut Milk extract from 1 coconut Curry Leaf 20pcs Kaffir Lime Leaf 3pcs Pandan Leaf 3pcs
Spices: Fresh Galangal 30g Old Ginger 20g Fresh Turmeric 20g Candlenuts 5 Lemon Glass 4
Method: Pound all spices ingredients until fine. Remove and keep aside. Peal potatoes and wedged. Rinse with water and drained. Deep fry until golden brown. Cish up. Combine the pounded spices with coriander powder, chilli powder and curry paste. Heat 5 tbsp oil, stir fry the mixture over low heat until aromatic. Add in potatoes, Hei Zhen Zhu, Chinese Cinnamon, Pandan Leaf, coconut milk and water. Bring to boil, then simmer over low heat for 30 minutes until souce is slightly thicken. Add in Curry Leafm Kaffir Lime Leaf. Continue cooking for 15 minutes. Serve hot.
